We recently harvested dandelion and burdock roots along with horseradish root.

The dandelion and burdock roots make a delicious roasted dandelion chai tea which is very warming for the winter months. (I will include the recipe below)

Winter is a time of slowing down, for reflection, going inward, reading by the fire while sipping warming herbal teas. I love to simmer homemade soups in cast iron pots on top of my wood stove.

We have cranberries & ginger root drying by the fire now. The cranberries will be added to my favorite simmering pot pourri recipe (see below) and the ginger root also goes into the dandelion chai tea recipe to add a warming touch.

EAT YOUR WEEDS

 

So many weeds growing in our yards now that are packed with vitamins & minerals and are free. Purslane, chickweed, lambs quarters, dandelion & more which can be added to salad, some cooked & others made into healthy vinegars.
